Sometimes I think I buy bananas and let them overripe on purpose so I have an excuse to make banana bread. I love banana bread and am lucky if a loaf lasts me a couple days! Lucky me, I had some bananas too ripe to eat and wanted to make homemade banana bread this time rather than using the pre-box mix I normally use. Here is what I did:

- 3 ripe bananas
- 1 stick of unsalted butter
- 2 large eggs
- 1 cup granulated sugar
- 1/4 cup of milk
- 1 tsp of vanilla extract
- 2 cups of all-purpose flour
- 1 tsp of baking soda
- 1/4 tsp of salt
- 1 8x5 loaf pan
- Cooking spray
- Large bowl
- Whisk or fork, if doing it by hand
- Electric mixer if not doing it by hand
- Spatula
Directions:
- Heat oven to 350 degrees and grease your baking pan
- Melt butter on low heat in microwave and add to bowl
- Combine melted butter and sugar, whisk until combined
- Add in your two eggs, whisk until completely smooth
- Add in milk and vanilla, whisk into batter
- Mash in your 3 bananas into the batter until you reach the consistency you like
- Add in your flour, baking soda, and salt. Use the spatula to stir in the ingredients until no more flour is visible
- Pour the batter into your greased loaf pan
- Bake for 50-65 minutes. Use a toothpick or fork to test the center and make sure the middle is cooked through.
- Let pan cool, remove loaf from pan and let cool a little longer before slicing it
- Add your favorite topping and enjoy!
